Palate Training Class @ Colonial: Identifying Pyrazines & Terpenes in Classic White Wines
I’m offering a series of in-depth and focused tasting seminars this July for folks who would like to pull back the curtain a little bit and explore tasting through a different lens: Chemistry!
Recent discoveries in the field of chemistry have identified important moleculular markers for common aromas in wine. In this first class we will explore white wine aromas described as ‘Floral’ and ‘Herbal’- common components of certain classic white wines.
In this class we will become familiar with major white (and maybe a lone red!) varieties associated with floral & herbal aromatics, their genetic relationships, and their common expressions in different places of origin. We will explore how certain molecules and compounds transmit these flavors in wine and how they are expressed in other mediums- such as flowers, grasses and aromatic herbs. The class will involve a mixture of lecture, flower & herb sensory presentation, and finally a 6-course wine tasting to demonstrate the principles in question.
